About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.
About Shizu Yuri - Shizu Hamono is a relatively βnewβ knife maker, established in 1959 in Seki by Masami Horibe, he grew in Seki city, the city of blacksmiths, and naturally became a craftsman. Their Yuri line sports a clean, minimalist aesthetic that we love. They fit right in to a modern kitchen, and the line is perfect for cooks of any skill-level that want a reliable knife that doesn't have to be babied. The AUS8 steel takes a great edge but doesn't chip easily, and the pakkawood handle is elegant and rugged. They even come in a gorgeous Paulownia wood box, making them perfect for gifts!
