About Shizu Shikisai Miyako-ย Shizu Hamono is a relatively โ€œnewโ€ knife maker, established in 1959 in Seki by Masami Horibe, he grew up in Seki city, the city of blacksmiths, and naturally became a craftsman.

The Shikisai Miyako is an elegant choice for both chefs and home cooks. AUS-8 stainless steel is low maintenance, keeps a great edge, and is more rugged than most Japanese steels. The 33-layer damascus finish makes for a stunning piece, finished with a weighty, confident pakkawood handle. Perfection!

About the Shape -ย Inspired by the profile of a traditional European chef knife, Gyutos are a multi purpose knife with a slight meat cutting bias. โ€œGyutoโ€ translates to โ€œcow sword.โ€ If you want one knife to do it all, This is it. Starting at 180mm, Gyutos can reach the ridiculously long (and awesome) 370mm. For the at-home or professional cook, we recommend a Gyuto which measures between 210mm and 270mm long.
