They have worked with Shun to craft some of the more elaborate knife designs we've seen and are now branching out to create their own knife series. Visiting their factory in Seki is like stepping into the future. And while we suckers for the ultra-handmade knife here at Knifewear, seeing the level of precision that Ono brings to their knives is awe-inspiring and full of exciting possibilities.Ā 

The Suzukaze line is made with SG2 stainless steel, which holds a razor-sharp edge super well! Despite being a heftier blade, they are really nice and thin behind the edge and cut beautifully. It has a Damascus tsuchime finish and a hybrid-style handle that feels confident in the hand.

About the Shape - This is the knife for smaller jobs that are done on a cutting board. Perfect for slicing shallots, cutting herbs, and boning smaller proteins. Additionally, Petty knives are an indispensable tool for those who feel uncomfortable wielding a larger chef knife.
